Nicolai Kirk...He took us all by storm in the 90s when he took over Restaurant Olsen and later our living rooms as a breakfast chef in go'morgen Danmark. He is insanely talented and resourceful and is revolutionizing the gastronomy scene, just as inventive and boundary-breaking as he has always been. A big star.

About the event
When Nicolai arrived at Restaurant Olsen in Store Kongensgade back in 1994/95, he started a completely new way of being a chef. There was momentum, and the combination of professional superiority and wildness made him Rock n' roll. He cooks differently, he prepares differently, his approach is different and he is just different in general. When you look at his fantastic career, it also radiates a man who makes different choices and who is not afraid to speak his mind and stand by it. Nicolai's influence and influence on the development of Danish gastronomy is undeniable. I think back with great pleasure to the late 90s and early 00s when we were both employed as head chefs in the same organization but in our own kitchens. As I remember, we were in fierce competition every single day for exactly everything... Wildest menu, number of guests, highest turnover and we did EVERYTHING to get a small victory. Far too many times I had to bow to Nicolai's fantastic imagination and ability to make things happen. It was great and I can only say that I look forward like a little child to Nicolai Kirk coming to visit Parsley Salon.
