
ALLAN SCHULTZ, OWNER AND CHEF
Allan is the heart of Parsley Salon. He began his gastronomic career in 1985 and over the years has contributed to the Copenhagen restaurant scene as we know it today.
Schultz helped create and shape some of the greatest gastronomic institutions of the 1990s and 2000s, such as KONRAD, Copenhagen's absolute in-place in the late 90s, and Café Victor, which is still going strong. He was also part of the gastronomic top of the time at THE DINING ROOM and La Cocotte, and not least as the owner of Restaurant Schultz under his own name (now Den Lille Fede), where the classic craftsmanship combined with the inspiration from his time in Los Angeles shone through.

Allans Schultz's fine dining restaurant in the heart of Hellerup is his bid to create a setting where the guest and the good virtues are paramount, and where everything from wine to the tasty menus is a tribute to good craftsmanship, memorable flavor combinations and quality that lasts decade after decade.
At Parsley Salon, the goal is to create truly special evenings, where everything a guest could think of and wish for is provided. From the moment you step into the intimate basement, decorated with hand-painted English 'parsley wallpaper' on the walls, until the evening is over.

Parsley Salon is open Tuesday to Friday, and on selected Saturdays you also have the opportunity to experience the country's best, famous and infamous top chefs in new surroundings when Parsley Salon brings together the legends of the industry.
"The Evening of Legends" was created by Allan Schultz with the desire to bring together all those who are responsible for Danish gastronomy and create some fantastic food experiences that are based on a shared love for classic cuisine.

Allan inspired me and pushed me towards my goals, teaching me never to give up, but to stay on track and work hard.
When we opened my first restaurant in 1995, Restaurant Olsen, Allan was the first to offer his help. When we later opened Konrad, Allan was a natural fit for the role as head chef. After a few years abroad, he was full of energy and innovation, which helped to shake up the Copenhagen restaurant scene.
Allan is a leader, a friend, an empathetic person, a stability without limits, but not least he is a fantastic chef and administrator of a kitchen. Which is also reflected in his international and Danish network in the restaurant industry. Everyone wants to go further for Allan, because he will always do it for them.
