Parsley is not an ordinary restaurant.
Not in the traditional sense. It's more like stepping into our living room – our second home. Here it's about presence, intimacy and fantastic ingredients.
From the moment you step into our little universe, we have already planned most of the evening for you. We have planned the food and what you will drink with it, a bit like when you visit good friends. We have done this because it is important that you have the best experience that we can possibly provide. For us, this means that everything MUST fit together. All servings are carefully conceived and prepared with feeling and precision, in tune with the season and our Danish climate. This is our specialty here at Parsley Salon, and we are, in all modesty, skilled at exactly that. Without being pretentious, we have geeked out over every taste and nuance down to the smallest detail. An extraordinary meal is built around food and drink in close interaction. Of course, the food itself must be excellent, but only when you pair the food with the perfect drink does it merge into a higher unity and become extraordinary. That is why we do not have a wine cellar and an extensive wine list like many other restaurants. We have already selected the best match. There is undeniably a lot of good wine in our world, but it is important for us to point out that the wine you like the most is not necessarily the one that goes best with the dish we make. In fact, it is not at all certain that it is a wine that goes with the dish. It could also be a fine, nuanced tea flavored with the juice of wild horseradish, just to give an example. Parsley uses only local herbs, many of which are picked by us in the surrounding nature or grown on the best biodynamic farms in North Sealand and the surrounding area. Every ingredient is utilized to the fullest, as we believe in a shared responsibility and a commitment to being as sustainable as possible. We only use fish and marine animals that are not threatened species, and that can be fished in our Danish waters and, if necessary, Norwegian waters. With the ambition to serve the best fish and vegetables of the season, Allan creatively creates new dishes every 3-5 weeks. The food is prepared with the utmost respect for the individual taste, ingredient and texture. During the season, Alexander goes on a daily foraging trip to ensure that our guests are served fresh, wild flowers, herbs and vegetables that have just been picked within the last 24 hours. In other words, we really go out of our way, and we therefore ask you as a guest to just shrug your shoulders, relax and trust us. We promise that we will do our utmost to ensure that you have a truly wonderful evening in our living room.
