
The Night of Legends


The story is told and written in the Parsley Salon and is a tribute to the chefs behind the success story that Danish gastronomy has developed into.
These evenings are a unique opportunity to be part of the story of Danish gastronomy and those who helped create it, being told and written down by Allan Schultz and photographed by Jacob Thermansen.
The declared purpose is to show the development in Danish gastronomy, or more precisely to describe and pay tribute to the gallery of people who are behind the fantastic development that gastronomy in Denmark has undergone over the last four decades.
It is not something that came about by itself. It is hard and purposeful work done to a particularly high degree by the fantastic people you can meet here at Parsley Salon. As a guest, you will be able to meet almost all of the active chefs as well as the now living legends who laid the stones that the rest of us have built on. It is both a good story and a wonderful experience, where you, as a guest, come all the way into the boiler room and can take home a taste of what these people can do.
All evenings are documented by the world-famous Danish food photographer JACOB THERMANSEN, who with his camera will capture the food in its making, the expression on the plate, the atmosphere in the kitchen and not least the atmosphere in the restaurant. All chefs serve three appetizers, a first course, a middle course, a main course and a dessert.
All dishes are immortalized in exactly the same photographic conditions and with the same equipment and the same lighting. What we get out of it is intensity and authenticity. No one can "cheat" and we give you everything we have... Time of day counts here.
Every time we have had 18 chefs through the kitchen, we collect it all in a large and beautiful book with a section about each individual chef, telling their story and with pictures from each individual evening. Thus, we write and document the story of some of the talented chefs who have been and are helping to move Denmark from being a hot dog nation to being a central player on the gastronomic world stage.
We want to create a place in the history of Danish gastronomy for all our fantastic guest chefs, so that traditions and knowledge are not lost and the good people and chefs of the future have even more to measure themselves against and be proud of.

Those who created the Danish 'Movement', which was ignited by a small handful of talented chefs in the 1980s. Those chefs started it all, more came along, followed up and carried it on. The movement grew, more people got carried away, inspired and animated to invest their entire store, or at least make the attempt, in becoming the best. These are the legends on whose shoulders Danish gastronomy stands today, and these are the ones we pay tribute to with THE EVENING OF LEGENDS,"

THE NIGHT OF LEGENDS - SELECTED DAYS AND IN BOOK FORM
Parsley Salon hosts the Legends Evening on selected days. These evenings bring together the adventurous story of the development of Danish gastronomy over the past 40 years.
Here you can meet the greatest and most influential chefs we have and have had in Denmark over the last 5 decades. In the link "LEGENDERNES AFTEN" you can read all about the project and how you can participate. Everyone has the opportunity to buy a ticket.
"The Evening of Legends" will also be published in book form, and as we are putting the finishing touches on the first volume of "The Evening of Legends", which will be published in 2024.
We are currently planning the next season, which we hope to start immediately in the new year. As soon as the plan is in place, it will be announced here on the site and in our newsletter.
